Hard Maple is “the” most popular hardwood used for cutting boards because of its wood density and blond to reddish-brown heartwood – its hardness of 1,450 lbf (Janka Scale) make it very durable and long lasting yet easy on knife edges. Hard Maple is a closed grain and non-porous wood which helps to stop liquids (food juices and blood) from absorbing into the wood minimizing bacterial contamination making it more sanitary.
