Black Walnut is a popular hardwood used for cutting boards because of its deep coffee brown heartwood contrasted by its creamy white sapwood – its hardness of 1,010 lbf (Janka Scale) make it tough and long lasting yet easy on knife edges. Black Walnut is a closed grain and non-porous wood which helps to stop liquids (food juices and blood) from absorbing into the wood minimizing bacterial contamination making it more sanitary.
BOARD CONSTRUCTION – Pennsylvania American Black Walnut with a 2”+ finished thickness – fine-sanded to a 320-grit, saturated with food-grade mineral oil then 2 coats of Odies Food-Grade Penetrating Oil establishing a deep oil/moisture barrier protecting the wood and helping to stop liquid from absorbing into the wood.
